Elazig cuisine, which has nearly 150 traditional food varieties, dates back to the Oghuzs. Meat, cereals and dairy products are mainly used in Elazig cuisine.
Among the prominent flavours of Elazığ Cuisine, we can count Harput meatballs, lobidik soup - prepared with dried black-eyed peas -, stuffed ribs prepared with almonds, roasted pestil prepared with Elazığ's famous pestils, kömbe prepared with minced meat and walnuts, küncülü meatballs with sesame seeds, dolanger, cherry ice cream prepared with the city's famous sour cherries, and the magnificent goat frying of Palu, famous for goat meat.
